Motley Que's Radical Veggie Skewer Revamp

Motley Que's Radical Veggie Skewer Revamp

Veggies, you're no longer sidekicks in the BBQ saga – it's your time to shine in the main event! We're giving those classic veggie skewers a Motley Que makeover, turning them from meh to mind-blowing with a twist that'll even have the carnivores drooling. Mrs. Motley freakin loves veggies and this is one of her favs!

- A riot of bell peppers (the more colours, the merrier)
- Zesty zucchini, sliced into thick moons
- Bold button mushrooms, ready to soak up flavour
- Onions, because what's a party without tears of joy?
- Cherry tomatoes for a pop of colour and juiciness

And here's the Motley Que twist: Pineapple chunks (Trust us, it's the game changer but note Big Joe is Allergic so thats why this is a Mrs. Motley Fav)

For the Marinade:
- 1/4 cup olive oil (the good stuff)
- 2 tablespoons of Motley Que's All Purpose Rub
- 2 tablespoons balsamic vinegar for a tangy kick
- 1 tablespoon honey – because sweet plays well with heat
- A generous squirt of lime juice for that zing
- A pinch of salt and a crack of black pepper, to taste

Skewer Assembly Instructions:

1. Veggie Prep Rally: Chop all your veggies and pineapple into skewer-friendly sizes. This isn't just prep; it's an art form.

2. Marinade Magic: Whisk together all the marinade ingredients until it's as mixed as the playlist at a 90s party. Pour it over your veggies and pineapple, and let them get cozy for at least 30 minutes. Overnight in the fridge? Even better.

3. Skewer the Skeptics: Thread those marinated masterpieces onto skewers. Alternate veggies with pineapple for that sweet, savoury, and slightly rebellious combo that only Motley Que would dare.

4. Grill and Thrill: Fire up your grill to medium-high heat. Lay down the skewers, turning every few minutes, until you've got those gorgeous grill marks and the veggies are tender-crisp. This isn't just cooking; it's a performance.

5. Serve with Swagger: Plate those skewers with a drizzle of the remaining marinade (give it a quick boil first for safety) and a sprinkle of fresh herbs. Serve them up with the confidence of a rock star at a sold-out show.

And there you have it, folks – Motley Que's take on grilled veggie skewers. They're so good, they might just steal the show from the meat. Get ready to skewer, grill, and thrill!
