
Fool Proof Low & Slow Pulled Pork

Ingredients:
- 1 Whole Bone in Pork Shoulder
- Motley Que Rib/Pork Fixx
- Motley Que Bark Builder
- BBQ Sauce (Optional)
Equipment:
- Smoker preheat to 225F (use Apple, Cherry, Pecan, Oak or Hickory Wood)
- Water pan if using a direct heat grill (place on rack under pork shoulder
- Tin Foil
- Disposable Foil Pan big enough to fit meat (or a reuseable one if your a fan of doing dishes)
- Instant Read Meat Thermometer
What makes this recipe great is the simplicity!
- Slather pork shoulder with Bark Builder
- Season liberally with Rib/Pork Fixx
- Add seasoned Pork to smoker (preheated to 225F)
- After 4 hours, gently rub your finger along the edge of the meat. If the seasoning stays stuck to the meat and doesn't come off on your finger, gently place pork shoulder fat side down in the pan and wrap tight with foil. If the seasoning does start to come off, apply a little seasoning where it rubbed off and try again (in a different area in another 30 minutes)
- Return to smoker and continue to cook until total cook time reaches 12 hours.
- Gently probe with thermometer. Tempo should read between 200F & 205F. What your looking for isn't an exact number, rather it should have the same resistance as going into room temp butter.
- Remove from smoker & "rest" for 2 hours. This can be done in an old cooler with an old towel over it, using things such as a meat swadle or even just sitting in your microwave (not running). This allows the juices to reabsorb.
- Meat should be easy to shred using a your hands (use proper lined gloves), or even with a wire potato masher or even using the dough mixing attachment on a stand mixer.
