- 6 bone-in, skin-on chicken thighs
- 3–6 garlic & parsley butter medallions (compound butter)
- All Purpose
- 1 tbsp Garlic Butter CGrillin' Oil
Instructions
1. Prep the Chicken
Pat the chicken thighs dry with paper towel. This helps the skin crisp up properly during cooking.
Gently lift the skin away from the meat using your fingers—be careful not to tear it.
2. Add the Butter
Slice the garlic & parsley butter if needed, then place it evenly under the skin of each thigh. Press the skin back down to cover the butter.
Season the outside of the chicken.
3. Cook
Heat a cast iron skillet over medium heat and add a small amount of oil.
Place the chicken thighs skin-side down and cook undisturbed for 10–12 minutes, allowing the skin to become golden and crispy.
Flip the chicken and continue cooking until fully done, either:
- in the pan over lower heat, or
- in the oven at 375°F (190°C)
4. Finish
Spoon any melted butter and pan juices over the chicken before serving. Let rest for 5 minutes.
