Ingredients

  • 1 cup cottage cheese (blend smooth)
  • 1 ½ cups PB2 powdered peanut butter
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract
  • 1 cup Krisda chocolate chips
  • ½ tbsp coconut oil

Directions

  • Blend cottage cheese until completely smooth
  • Mix in maple syrup and vanilla until fully combined
  • Add PB2 and mix until a playdough-like consistency forms
  • Roll into 1 tbs evenly sized balls
  • Chill until firm
  • Melt chocolate chips with coconut oil
  • Dip balls until fully coated

An immersion blender works best to achieve that smooth consistency. a blender works too but sometimes those blades get stuck.

For the coating, we used stevia-sweetened chocolate chips (Krisda) to keep things as natural as possible while reducing sugar—making this a great fit for a more paleo-style approach.
