Ingredients
- 1 cup cottage cheese (blend smooth)
- 1 ½ cups PB2 powdered peanut butter
- 2 tbsp maple syrup
- 2 tsp vanilla extract
- 1 cup Krisda chocolate chips
- ½ tbsp coconut oil
Directions
- Blend cottage cheese until completely smooth
- Mix in maple syrup and vanilla until fully combined
- Add PB2 and mix until a playdough-like consistency forms
- Roll into 1 tbs evenly sized balls
- Chill until firm
- Melt chocolate chips with coconut oil
- Dip balls until fully coated
- Let set, then enjoy

An immersion blender works best to achieve that smooth consistency. a blender works too but sometimes those blades get stuck.
For the coating, we used stevia-sweetened chocolate chips (Krisda) to keep things as natural as possible while reducing sugar—making this a great fit for a more paleo-style approach.
