Southern-Style Shrimp and Grits Recipe

Ingredients:

  • 1 lb Shrimp (raw, peeled, deveined)
  • 2 cups Yellow Corn Grits
  • 6 cups Homemade Chicken Broth
  • ½ lb Bacon
  • 1 clamshell Cherry Tomatoes (sliced in half)
  • 2 tbsp Olive Oil
  • 1 tsp Minced Garlic
  • 1 tbsp Creole Fixx Seasoning
  • ½ bunch Fresh Parsley (chopped)
  • Green Onions (for garnish)
  • Shredded Cheese (optional)

Tools You’ll Need:

  • Cast Iron Skillet (recommended: use 2 skillets for max flavor)
  • Pressure Cooker
  • Measuring Cups/Spoons
  • Cutting Board & Knife

Directions:

  1. Prep the Shrimp:
    Generously coat the shrimp with Creole Fixx seasoning and set aside.

  2. Cook the Grits:
    In a pressure cooker, combine grits and chicken broth. For creamier grits, replace part of the broth with heavy cream. Set to cook for 10 minutes, then allow a 10-minute natural release.

  3. Prep the Bacon and Tomatoes:

    • Slice bacon into ½-inch pieces.
    • Slice cherry tomatoes in half.
  4. Fry the Bacon:
    Heat one cast iron skillet over medium heat. Cook bacon pieces until they begin to crisp. Set aside and drain about half of the grease from the pan.

  5. Sauté Tomatoes and Garlic:
    In the second skillet, heat olive oil over medium heat. Add minced garlic and sauté for 2 minutes. Add the halved cherry tomatoes and parsley, cooking until the tomato skins start to wrinkle.

  6. Cook the Shrimp:
    Add seasoned shrimp to the skillet with the reserved bacon grease. Sauté until shrimp are pink, curled, and reach an internal temperature of 145°F.

  7. Assemble the Dish:

    • Spoon the cooked grits onto a plate and sprinkle with shredded cheese (optional).
    • Top with the shrimp, crispy bacon, and sautéed tomatoes.
    • Garnish with chopped green onions and serve immediately.
