Sticky Fixx Smoked Chicken Lollipops
These Sticky Fixx Smoked Chicken Lollipops take the humble chicken drumstick and give it one hell of a glow-up.
The drumsticks are frenched into lollipops, seasoned with Motley Que Chicken Fixx underneath the skin, then cooked in a bubbling bath of Sticky Fixx BBQ Sauce and Motley Que Garlic & Parsley Medallions. A final dunk and a few minutes back on the smoker sets that sauce into a glossy, sticky finish.
They look impressive, they're ridiculously fun to eat, and conveniently, they come with their own handle.

- 1 cup Motley Que Sticky Fixx BBQ Sauce

How to Make Smoked Chicken Lollipops
1. French the Chicken Drumsticks
Using a sharp knife, cut all the way around the narrow end of each chicken drumstick, cutting through the skin and tendons.
Scrape and push the meat, skin and cartilage down toward the thick end of the drumstick to create the classic chicken lollipop shape. Trim away any loose tendons or small secondary bones and clean up the exposed bone.
Wrap each exposed bone with a small piece of aluminum foil. This helps keep the bones clean and prevents them from getting too dark during the cook.
2. Get Under the Skin
Don't skip this step.
Carefully loosen and pull the skin away from the chicken meat while keeping the skin attached.
Season the exposed meat generously with Motley Que Chicken Fixx, making sure you're getting that seasoning directly onto the chicken.
Pull the skin back over top of the meat and smooth it into place. Finish with another light coating of Chicken Fixx on the outside.
Seasoning the skin is good.
Seasoning the actual chicken is better.
3. Make the Sticky Fixx Sauce Bath
Preheat your smoker or BBQ for indirect cooking at 275–300°F.
Add Motley Que Garlic & Parsley Medallions to a disposable aluminum pan and allow them to melt. Stir in 1 cup of Motley Que Sticky Fixx BBQ Sauce until combined.
You should have a rich, buttery BBQ sauce bath ready for those chicken legs.
Stand the prepared chicken lollipops upright in the pan with the meaty ends sitting directly in the Sticky Fixx and Garlic & Parsley mixture.
4. Smoke the Chicken Lollipops
Place the entire pan on the smoker and cook for approximately 1½–2 hours.
The chicken will pick up smoke while the bottoms cook in that bubbling Sticky Fixx and Garlic & Parsley bath.
Begin checking the internal temperature toward the end of the cook. Chicken is safe to eat at 165°F, but we like drumsticks closer to 175°F so the dark meat and connective tissue have more time to become tender.
5. Dunk 'Em and Get 'Em Sticky
Once the chicken is tender, carefully remove each lollipop from the pan.
Give it one more dunk in that warm Sticky Fixx mixture before placing it directly onto the smoker grates.
Cook for another 10–15 minutes, just long enough for the sauce to tack up and create that gorgeous, glossy finish.
Remove the foil from the bones and let the chicken rest for 3–5 minutes.
Then grab one by the handle and get after it.

Pull Back the Skin Before You Season
If you want better-tasting BBQ chicken, get the seasoning onto the meat itself.
Carefully separate the chicken skin from the meat while keeping it attached. Season underneath generously with Chicken Fixx, then pull the skin back over top before cooking.
It's one extra step that makes a big difference.
Messier hands. Better chicken.
What Temperature Should Smoked Chicken Lollipops Be Cooked To?
Chicken is considered safely cooked once it reaches an internal temperature of 165°F. For chicken drumsticks, however, we prefer cooking them a little further.
Taking smoked chicken lollipops to around 175°F gives the connective tissue in the dark meat additional time to break down, resulting in a more tender bite.
Always check the temperature in the thickest part of the meat without touching the bone.
