  • 1 × 28 oz can diced tomatoes
  • 3 cups chicken stock 
  • 1.25 lb boneless, skinless chicken thighs
  • 1 tbsp Garlic Grilling Oil
  • ¾ lb cooked Andouille sausage 
  • 1 medium yellow onion, diced
  • 2 green peppers, diced 
  • 4 celery ribs, diced
  • 4 garlic cloves, minced
  • 1 tsp tomato paste
  • 1 tbsp Crystal or Louisiana-style hot sauce
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ¼ tsp cayenne pepper Big 
  • 2 bay leaves
  • 2 cups cooked rice
  • ¾ lb shrimp, peeled & deveined
  • 6 scallions, thinly sliced
  • Brisket Fixx seasoning (to taste)

Instructions

  1. Preheat oven to 350°F. Heat Garlic Grilling Oil in an oven-safe pan over medium heat.
  2. Brown chicken thighs lightly (do not cook through), rest 5 minutes, then chop into ½-inch pieces.
  3. Add diced onion, peppers, and celery; sauté 6–8 minutes, scraping up browned bits.
  4. Stir in garlic and tomato paste; cook 1 minute until fragrant.
  5. Mix in hot sauce, cayenne, Brisket Fixx, chicken stock, and diced tomatoes.
  6. Stir in chicken pieces and bay leaves; bring mixture to a gentle simmer.
  7. Add cooked rice; stir and simmer again for 2–3 minutes.
  8. Cover pan and bake in the oven 30–40 minutes until liquid is mostly absorbed.
  9. Add shrimp and scallions; return to oven for 5 minutes until shrimp are cooked through.
  10. Remove bay leaves. Finish with additional hot sauce if desired.
