Ingredients
Bourbon Banana Pastry Cream
- 2 cups whole milk
- 1/2 cup brown sugar
- 1/4 tsp ground cinnamon
- Pinch of salt
- 6 large egg yolks
- 1/3 cup cornstarch
- 1 tsp vanilla extract
- 1/4 cup bourbon
- 1/4 cup butter
Whipped Topping & Assembly
- 1 cup heavy whipping cream (237 ml)
- 2 tbsp sugar
- 1 tbsp bourbon
- 2 large bananas, sliced
- 1 prepared graham cracker crust

Make the Bourbon Pastry Cream

Brown the Butter
In a small saucepan, melt the butter over medium-low heat. Continue cooking, stirring occasionally, until the butter turns light brown and smells nutty. Remove from heat and let cool slightly. -
Heat the Milk
In a medium saucepan, heat the milk, brown sugar, cinnamon, and salt until steaming. Stir to fully dissolve the sugar. -
Temper the Eggs
In a large bowl, whisk together the egg yolks and cornstarch. Slowly pour the hot milk mixture into the eggs while whisking constantly to prevent curdling. -
Thicken the Custard
Pour everything back into the saucepan and return to medium heat. Whisk continuously until thickened, about 5 minutes. -
Finish the Cream
Remove from heat and whisk in the vanilla extract, bourbon, and browned butter. Strain the pastry cream through a fine mesh strainer and chill completely in the fridge.
Assemble the Pie
