Sweet Heat Bison Chili

Sweet Heat Bison Chili

Looking for a chili recipe that breaks all the rules? Our Sweet Heat Bison Chili is dark, smoky, and packed with bold flavors. Made with lean bison, earthy root vegetables, and our signature Raspberry Chipotle BBQ Sauce, this chili is perfect for cold nights, slow cooking, and anyone craving something unique.

Ingredients

  • 1 lb ground or cubed bison
  • 2 tsp Garlic Butter Grillin’ Oil
  • 1 large onion, diced
  • 4–6 cloves garlic, minced
  • 1 litre Raspberry Chipotle BBQ Sauce
  • ½ cup blackstrap molasses
  • 1 lb diced root vegetables (turnips, parsnips, beets)
  • Salt and pepper to taste

Instructions

  1. Heat the oil: In a Dutch oven or slow cooker insert, warm the Garlic Butter Grillin’ Oil over medium heat.
  2. Brown the bison: Add ground or cubed bison and cook until well-colored. This step builds deep flavor for your chili.
  3. Cook the aromatics: Add the diced onion and cook until softened. Stir in the garlic and cook briefly until fragrant.
  4. Add the veggies and sauce: Stir in the root vegetables, Raspberry Chipotle BBQ Sauce, and blackstrap molasses. Mix until everything is well combined.
  5. Simmer low and slow: Cover and cook on low for 8 hours in a slow cooker, or simmer in the Dutch oven. Stir occasionally if possible to ensure flavors meld.
  6. Season to taste: Finish with salt and pepper. Adjust seasoning as needed before serving.

Pro Tip: Whip up a batch of Motley Que Crazy Cornbread to serve alongside this chili — the perfect balance to smoky, sweet heat.

Why This Bison Chili Stands Out

Unlike traditional beef chili, this recipe combines lean bison meat, root vegetables, and Raspberry Chipotle BBQ Sauce for a bold, earthy, and slightly sweet flavor. Slow-cooking lets the flavors develop fully, giving you a chili that’s rich, deep, and unlike anything you’ve had before.
