Spicy Thai Shrimp Soup Recipe – Warm Up Your Winter

Nothing beats the January chill like a steaming bowl of spicy Thai shrimp soup. Packed with bold flavors, tender shrimp, and a creamy coconut broth, this easy soup recipe is perfect for a quick weeknight dinner or a cozy weekend treat.

Ingredients:

  • 1 lb deveined shrimp
  • 2 tsp Garlic Grilling Oil
  • 1 medium bell pepper, chopped
  • ½ medium yellow onion, chopped
  • 4 tsp minced garlic
  • 1 tbsp minced ginger
  • 3 heaping tbsp red curry paste
  • 4 cups chicken or vegetable stock
  • 1 can coconut milk
  • 1 tsp red chili flakes 
  • Salt & pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat 1 tsp of Garlic Grilling Oil in a large saucepan over medium heat.
  2. Add the shrimp, season with ½ tsp red chili flakes, salt, and pepper. Cook until just pink, then remove and set aside.
  3. Heat the remaining oil in the same pot. Add chopped bell pepper and onion, cooking for 3 minutes while stirring occasionally.
  4. Stir in garlic, ginger, and remaining chili flakes. Cook until fragrant, about 2 minutes.
  5. Add red curry paste and cook for 1 minute, stirring constantly.
  6. Pour in chicken or vegetable stock, followed by coconut milk. Bring the soup to a low boil.
  7. Return the cooked shrimp to the pot and simmer on low for 5 minutes.
  8. Serve topped with fresh cilantro and enjoy immediately.

Want a heartier soup? Stir in 2 cups of cooked basmati rice to turn this Thai shrimp soup into a filling, one-bowl meal.
