Spicy Thai Shrimp Soup Recipe – Warm Up Your Winter
Nothing beats the January chill like a steaming bowl of spicy Thai shrimp soup. Packed with bold flavors, tender shrimp, and a creamy coconut broth, this easy soup recipe is perfect for a quick weeknight dinner or a cozy weekend treat.
Ingredients:
- 1 lb deveined shrimp
- 2 tsp Garlic Grilling Oil
- 1 medium bell pepper, chopped
- ½ medium yellow onion, chopped
- 4 tsp minced garlic
- 1 tbsp minced ginger
- 3 heaping tbsp red curry paste
- 4 cups chicken or vegetable stock
- 1 can coconut milk
- 1 tsp red chili flakes
- Salt & pepper to taste
- Fresh cilantro for garnish
Instructions:
- Heat 1 tsp of Garlic Grilling Oil in a large saucepan over medium heat.
- Add the shrimp, season with ½ tsp red chili flakes, salt, and pepper. Cook until just pink, then remove and set aside.
- Heat the remaining oil in the same pot. Add chopped bell pepper and onion, cooking for 3 minutes while stirring occasionally.
- Stir in garlic, ginger, and remaining chili flakes. Cook until fragrant, about 2 minutes.
- Add red curry paste and cook for 1 minute, stirring constantly.
- Pour in chicken or vegetable stock, followed by coconut milk. Bring the soup to a low boil.
- Return the cooked shrimp to the pot and simmer on low for 5 minutes.
- Serve topped with fresh cilantro and enjoy immediately.
